What is seitan anyway? Although many have heard of seitan, they often don't know exactly what it is. Seitan is an Asian speciality made from wheat protein with a long tradition. Seitan was originally developed by Buddhist monks and is still an integral part of Buddhist cuisine throughout East and Southeast Asia.
For the production of seitan a dough is formed from wheat flour and water, which is kneaded in warm water. The starch passes into the water and the result is a protein-rich raw mass of wheat protein. This is then cooked in a broth with spices. The result is a versatile product and a sustainable source of protein.
